Vegan Meal of the Week: Whole Wheat Tofu Lasagna Spirals

Instead of putting meat and cheese in your lasagna this week, try this tofu recipe!

Serves: 5

Ingredients:

4 oz whole wheat lasagna

7 oz firm tofu

1 cup thawed, frozen chopped broccoli

1/4 tsp salt

1/2 tsp dried oregano and dried basil

1 cup fresh basil, chopped

3/4 jar tomato sauce


Directions:

1. Cook lasagna according to the package. Drain noodles and lay out on a flat surface or tray.

2. Preheat oven to 350 degrees F.

3. Mash tofu and combine with broccoli, salt, oregano, and basil in a bowl. Mix well.

4. Spread mixture evenly over noodles within 1/2 inch of each end and roll up into a spiral.

5. Place 1 cup tomato sauce in a well-oiled dish. Set rolls upright in the dish, then pour remaining tomato sauce over the rolls.

6. Cover and bake for 30 minutes, then serve!
