Peanut Noodle Vegan Pad Thai

Enjoy this delicious recipe based on a recipe by @biancazapatka!


Ingredients for Noodles:

12.5 oz linguine noodles

1 spiralized zucchini or pre-packaged spiralized zucchini

3 carrots, peeled into ribbons

1 bell pepper, finely sliced

1/2 bunch of scallions, sliced

3 garlic cloves, minced

7 oz baked tofu, sliced

2-3 tbsp olive oil

2 cups broccoli, chopped


Ingredients for Peanut Sauce:

1/4 cup creamy peanut butter

1/4 cup cashew milk

1/4 cup soy sauce

1 tbsp agave nectar

Squeeze of fresh lime juice


Directions:

1. Cook noodles according to package. Drain and set aside.

2. Heat 1 tbsp olive oil in a skillet. Add garlic and scallions and sauté for 3-4 minutes. Remove and set aside.

3. Heat 1-2 tbsp olive oil in a large skillet. Add vegetables and sauté until ready.

4. Make the peanut sauce by combining all ingredients in a blender until smooth.

5. In a large pot, combine noodles, vegetables, garlic, scallions, and peanut sauce. Enjoy!
