Keep Warm this Winter with Udon Noodles!

Support this connection between humans, animals, and the environment by eating vegan today with these delicious udon noodles, a vegan version of the recipe on the Simply Asia Udon Noodles box.


Serves: 7

Ingredients:

1 14 oz package udon noodles

1 tbsp olive oil

1 tbsp minced garlic

1 tbsp crushed ginger

8 oz chopped baked tofu

4 cups vegetable broth

2 tbsp soy sauce

1/2 tsp salt

1 cup shredded carrots

1 cup chopped zucchini

2 cups chopped broccoli


Directions:

1. Cook udon noodles as directed by package.

2. Meanwhile, heat oil in large saucepan on medium.

3. Add garlic and ginger and cook for 1 minute.

4. Add broth, soy sauce, carrots, and salt.

5. Bring to boil, reduce heat and simmer for 5 minutes.

6. Stir in broccoli, tofu, and zucchini and cook for 2 minutes.

7. Add cooked noodles and serve in bowls. Enjoy!
