Vegan Meal (No, Dessert) of the Week: Peanut Butter Cookies

These vegan peanut butter cookies, adapted from a recipe on https://chocolatecoveredkatie.com/2011/12/11/secret-peanut-butter-cookies/ , are delicious and easy to make!

Makes: 20 cookies

Ingredients:

1 cup peanut butter

1 1/2 tsp baking soda

6 tbsp flour

2/3 cups sugar

4 tbsp applesauce

1 tsp vanilla extract

1/4 tsp salt

20 chocolate chips (vegan-- I used the Trader Joe's brand)


Directions:

1. Combine peanut butter, baking soda, flour, sugar, applesauce, vanilla extract, and salt in a bowl.

2. Mix ingredients together.

3. Refrigerate the dough for an hour.

4. Preheat the oven to 350 degrees F.

5. Roll cookies into balls.

6. Bake cookies on a greased pan for 8 minutes once the oven has preheated.

7. Let cookies cool for 10 minutes after taking them out of the oven.

8. Enjoy!
