Delicious Vegan Cinnamon Rolls!

These amazing cinnamon rolls are sweet and easy to make! Based on a recipe from Daily Vegan Meal. They also don't require yeast, which is hard to find in stores right now. See the original here:


Ingredients

for dough:

2 1/4 cups flour

1 tbsp baking powder

1/2 tsp salt

1/2 cup vegan butter (cut into cubes, if frozen defrost and refrigerate first)

1/2 cup and 2-3 tbsp unsweetened almond milk


for melted butter layer:

3 tbsp melted vegan butter (microwave for about 20 sec)


for filling:

1/2 cup brown sugar

1 1/2 tsp cinnamon


for icing:

1 1/4 cups powdered sugar

2 tbsp vegan butter

1 tsp vanilla extract

1 tbsp unsweetened almond milk


Instructions:

1. Mix together flour, baking powder, and salt in a large bowl. Next, mix butter into the flour by cutting it up with fork. Then add 1/2 cup plus 2 tbsp almond milk and stir until combined into dough. If dough is too dry, add up to another tablespoon of almond milk.

2. Knead the dough together then let rest in the bowl for 15 minutes.

3. While the dough is resting, mix together the cinnamon and sugar in a small bowl and set aside for later. Ready a parchment-lined 8 in or 9 in baking dish. Also prepare a clean work surface and sprinkle with flour. Melt your butter if you haven't done so already.

4. After the dough has rested, preheat the oven to 400 degrees F.



5. On your flour-dusted work surface, roll out the dough with a rolling pin. Try to get close to a rectangle about 1/3 to 1/2 inch thick.

6. Pour the melted butter over the dough and spread to cover with a pastry brush or back of a spoon.

7. Take your cinnamon-sugar mix from earlier and sprinkle evenly over the melted butter.

8. To roll up the cinnamon rolls, cut 8-10 even lines in the dough with a knife, about an inch thick. You can start cut vertically or horizontally , depending on how large you want your rolls (I went horizontally). One by one, take the pieces you have cut and roll them up, then place them in the baking dish. If you want to try another method, try the link to the original recipe above (I rolled mine differently).

9. The rolls will be a little crammed together in the baking dish, but that's fine. They'll expand into each other a little and you'll be able to pull them apart when you take them out.

10. Bake the rolls for 30-35 minutes until lightly golden.

11. When 10-15 minutes are left for the rolls to bake, make the icing by combining powdered sugar, softened vegan butter, vanilla extract, and almond milk in a bowl.

12. Remove cinnamon rolls with done and place on a cooling rack. While warm, spread icing over rolls so that it melts in. You can eat them warm or cool! Enjoy!
