Vegan Banana Bread!

This is an easy and delicious recipe, especially if you have some overripe bananas you forgot about!

Ingredients:

1 3/4 cups flour

1/3 cup sugar

2 tsp baking powder

1/2 tsp baking soda

pinch of salt

1/3 cup vegan butter

1 tsp vanilla extract

3-4 overripe bananas, mashed (should amount to about 1 1/2- 1 3/4 cups)

1/4 cup almond milk


Instructions:

1. Preheat oven to 350 degrees F. Prepare a greased loaf pan.

2. In a large bowl, mash bananas, add vegan butter, and vanilla extract. Mix together.

3. Add flour, sugar, baking soda, baking powder, and salt. Mix together again. Note that the batter will not be completely smooth and can have a few lumps. If it seems to thick, add up to 1/4 cup almond milk.

4. Pour batter into the greased pan and bake for 50 min-1 hr. Test with a toothpick. Make sure it comes out clean to let you know it's done. Let cool for 10 minutes before slicing. Enjoy!
