Vegan Cookies with Colorful Frosting!

This delicious recipe, based on a recipe from Minimalist Baker, makes 24 tasty vegan cookies!


Ingredients for cookies:

1/2 cup softened vegan butter

2/3 cup sugar

1 tsp vanilla extract

3 tbsp chickpea brine (the liquid left behind in canned chickpeas)

3/4 tsp baking powder

1/4 tsp sea salt

2 1/3 cups flour

1 tbsp unsweetened almond milk


Ingredients for frosting:

1/2 cup vegan butter

1 1/2 cups sifted organic powdered sugar

1/4 tsp vanilla extract

1 tbsp unsweetened almond milk

Food coloring in various colors

Rainbow sprinkles


Directions:

1. Preheat oven to 375 degrees F and grease 2 baking sheets or line with parchment paper, then set baking sheets aside.

2. Add softened vegan butter to a large mixing bowl and beat or whisk for about 1 minute until smooth.

3. Add sugar and mix on medium for about one minute, or until the mixture becomes light and fluffy.

4. Add chickpea brine and vanilla and mix again.

5. Add baking powder and sea salt and whisk to combine.

6. Add flour and cornstarch and mix on low until the ingredients are combined. You may need to switch to a wooden spoon since the mixture gets very thick.

7. Add almond milk and stir again, until the dough is moldable, thick, and starting to be hard to mix.

8. Move the dough to the refrigerator and chill for 15 minutes.

9. Once chilled, use a tablespoon or cookie scooper to measure out 1 1/2 tbsp amounts of dough. Roll the dough into balls, being gentle with it. Lay out on the baking sheets with about 1 inch between each. Press down carefully with the palm of your hand.

10. Bake cookies for 11-12 minutes. Let cool on baking sheet for 10 minutes.

11. To make frosting, place softened vegan butter in a mixing bowl and whisk or beat until soft and fluffy, for about 1 minute. Then, in small amounts, sift in powdered sugar in small amounts and mix. When you have added about a cup of powdered sugar, add the vanilla extract and whisk. Then add the rest of the powdered sugar until you have spreadable frosting.

12. For different colors, split the frosting equally into 3-4 bowls depending on how many different colors you want. Add a few drops of food coloring and mix frosting until it is dyed.

13. Spread the frosting on the cookies and add rainbow sprinkles on top. Enjoy!
