Delicious Dark Chocolate Peanut Butter Pie!

This is a tasty, vegan, easy-to-make recipe with simple ingredients!


Ingredients:

1 package oreos

4 tbsp vegan butter, melted (I used Earth Balance)

12 oz silken tofu, drained

2 3.5 oz bars vegan dark chocolate (I used Lindt excellence supreme dark)

1/4 cup peanut butter

1 tsp vanilla extract


Directions:

1. For the oreo pie crust, preheat the oven to 350 degrees F.

2. Break up 24 of the oreos into small chunks then place in a blender. Blend until they turn into fine crumbs.

3. Combine oreos with butter in a mixing bowl.

4. Pour the mixture into your pie pan and press into an even layer on the bottom and sides.

5. Bake for 8-10 minutes and refrigerate after for at least 15 minutes to let cool before adding filling.

6. To make the filling, break up the chocolate bars into small pieces and place in a pot. Boil water in another pot and hold chocolate pot above boiling water. Stir chocolate occasionally until melted.

7. While chocolate is heating, add peanut butter, silken tofu, and vanilla extract to a blender.

8. When chocolate is melted, add to blender with other ingredients. Blend everything together until smooth and homogenous.

9. Pour pie filling into crust and spread evenly.

10. Crush up remaining oreos and sprinkle over pie for topping.

11. Refrigerate for at least 2 hours. Enjoy!
