Easy Quinoa Salad with Citrus-Lime Dressing!

Try this sweet and easy plant-based quinoa salad today!

Ingredients:

2 cups water

1 cup quinoa

3/4 tsp salt

1 yellow, orange, or red bell pepper, chopped

2 medium cucumbers, chopped

1 can corn niblets, drained

1/4 cup vegetable oil

1/4 cup lime juice

1/4 cup orange juice

1/8 tsp black pepper


Directions:

1. Bring water to a boil in a medium saucepan with ½ teaspoon of salt.

2. Add quinoa and return to a boil.

3. Reduce to a simmer, cover and cook for 15-20 minutes until the water has been absorbed.

4. Spread the quinoa on a baking sheet to cool for 10 minutes.

5. Mix quinoa, chopped bell peppers, chopped cucumbers, and drained corn together in a large bowl.

6. To make the dressing, combine 1/4 tsp salt, 1/4 cup vegetable oil, 1/4 cup lime juice, 1/4 cup orange juice, and 1/8 tsp black pepper. Pour amount desired over your quinoa salad. I advise starting with half the dressing and adding more if you want more on your salad. You can also save the dressing to add to leftovers, since it tends to get more absorbed over time.

7. Keep refrigerated. Enjoy!
