Vegan Meal of the Week: Stir Fry with Tempeh

Natural behaviors have been "bred out" of modern farm animals from years of captivity and selective breeding. Help change this by eating this delicious stir fry with tempeh instead of chicken!

Serves: 6
Ingredients:
1 cup vegetable broth
1 tsp of minced garlic
3 tbsp soy sauce
1 1/2 tbsp cornstarch
Soy sauce to cover tempeh
3 tbsp olive oil
2 cups broccoli
2 cups zucchini
2 cups cauliflower
Brown rice
1 8 oz package tempeh
Directions:
1. Marinate the tempeh in a glass dish with a cover, with enough soy sauce to cover it in the refrigerator for 30 minutes.
2. Start cooking the rice according to the package it comes in.
3. When the tempeh is done marinating, sauté in 1 tablespoon olive oil until brown.
4. Remove and dry sautéed tempeh on a paper towel.
5. Sauté vegetables in 2 tablespoons of olive oil until cooked well and soft.
6. Mix together broth, soy sauce, and minced garlic. Then add the cornstarch. Pour over vegetables.
7. Add tempeh to the stir fry. Serve with brown rice. Enjoy!
