Vegan Meal of the Week: Risotto

According to downtoearth.org, overgrazing from livestock farming causes soil erosion, desertification, and deforestation. Twenty percent of the world’s grazing land is already degraded due to the raising of animals for meat. Stop this from continuing by eating vegan today and trying this deliciously vegan risotto!


Serves: 6

Ingredients:

4 cups vegetable broth

1 cup white rice

1 tbsp olive oil

1 clove garlic

Variety of vegetables (carrots, broccoli, peppers, zucchini, celery, cauliflower, etc), chopped small


Directions:

1. Sauté rice in olive oil for 3 minutes.

2. Add broth, 1/2 cup at a time, simmering until broth is absorbed.

3. Add vegetables about halfway through adding the broth.

4. Once all broth is gone, the risotto is done. Enjoy!
