Sometimes there's just not time to make a fancy dish, so here are two easy but delicious recipes you can make quickly for lunch or for a snack!

1) Pasta Salad: Cook your choice of pasta (I did farfelle, penne, and whole wheat rotini) and let cool. Then add shredded carrots, sliced cucumbers, halved grape tomatoes, olives, and your choice of dressing. Keep refrigerated. Enjoy!


2) Kale Chips: These are great to make with leftover kale from the soba noodles recipe! Preheat the oven to 350 degrees Fahrenheit and tear kale into bite-sized pieces. Spray a baking sheet with non-stick olive oil spray, then lay out the kale pieces. After that drizzle a tablespoon of olive oil and sprinkle sea salt over the kale. Bake for 10 minutes, then serve!
